"You're the apple of our eye"
The weather is turning…slowly but surely, and my kids and I already made our first trip to an apple orchard, Picnic Hill in Lincoln. Local produce always seems to taste better, and supporting a fellow entrepreneur always makes me smile. With the bushels of apples you’ll be picking this fall, here are a few ideas to put them to good use (outside apple crisp of course!)
Many of you miss our savory program at TCS, so I’m sharing a few recipes you guys love to eat!
Superfoods Bowl
- 170 g greek yogurt (or your favorite yogurt of choice)
- 1/8 tsp maca powder
- 1 apple, poached in chai tea, and cut into slices
- 1 oz apple butter
- 1 tsp bee pollen
- 6 g cocoa nibs
- 15 g granola (this is the granola recipe I shared in a previous email!)
- Drizzle local Valhalla honey
Spoon yogurt into bowl, and evenly shake maca powder all over top. Take a spoonful of your poaching liquid and pour over yogurt/maca. Fan your fruit slices over the right half of your bowl, and your apple butter on other 1/2. Sprinkle lines of garnishes from left to right (pollen, nibs, granola) Lightly drizzle honey over your entire bowl. Enjoy!
Apple Bacon Grilled Cheese
- White Sourdough or Garlic Asiago from local bakery, Le Quartier
- 1/2 oz apple butter
- 2 slices bacon
- 1/4 apple- thinly sliced
- 1 oz havarti
- 1 oz cheddar
- 1/2 Tbl fresh thyme (leaves plucked off the stem)
- Drizzle local Valhalla honey
Layer apple butter on one slice of bread, take other slice and layer cheeses, bacon, then apple and top with 1/2 your thyme and sandwich together. Butter outsides of bread and toast in skillet. Finish grilled cheese with drizzle of honey and remainder of fresh thyme. Devour!
