We took the classic caramel and put a TCS twist on it.  We infused our slow-cooked caramel with actual vanilla bean and enrobed it in Valrhona 38% milk chocolate.  

To offset the incredibly soft caramel, we garnish it with raw, crunchy cocoa nibs, with just enough bitter bite to keep this caramel interesting.
